Budapest rewards the curious wine drinker. You can begin with a cold glass of Furmint in a handsome old cellar, pause for a small plate of cheese or cured meat, then finish the evening with a peppery red while the city lights come on. Hungary has a long, distinctive wine culture, yet it is still unfamiliar to many visitors. The names on a wine list can look intimidating at first, but the pleasure lies in trying something that does not taste like the usual international selection. A good first rule is simple: ask for Hungarian grapes and let the style of wine lead you.
If you have only one evening, start with Furmint. It is Hungary’s best-known white grape and comes most famously from Tokaj in the north-east. In its dry form, Furmint can be bright, stony and citrus-led, sometimes with a gentle apple note and a firm, refreshing edge. It is an excellent aperitif after a day of walking, especially if you enjoy dry Riesling, Chablis or mineral-driven whites.
Do not assume Tokaj means sweet wine, though. The region is celebrated for its golden, sweet Aszú wines, made with grapes affected by noble rot, but its dry Furmints and blends are among the country’s most exciting bottles. A small pour of Aszú after dinner is worth trying at least once. It is rich with apricot, orange peel and honeyed flavours, yet a good example remains beautifully balanced rather than sticky.
For a softer, more aromatic white, look for Hárslevelű. Its name translates as “lime-leaf”, and it often carries floral, orchard-fruit and lightly spiced notes. It can appear on its own or alongside Furmint in a blend. If a wine list offers both, tasting them side by side is a lovely way to understand how varied Hungarian whites can be.
Tokaj is a fine place to begin, but it is not the whole story. Hungary’s wine regions are remarkably varied, shaped by volcanic soils, limestone, loess, lake breezes and warmer southern slopes. That diversity is one reason a tasting can be far more interesting than simply ordering the same grape twice.
Somló, a tiny volcanic wine region west of the city, is known for serious, distinctive whites. Juhfark is its calling card: high in acidity, savoury, structured and often unmistakably mineral. It is not always a crowd-pleaser on the first sip, particularly if you prefer fruity wines, but it is memorable and superb with food. Think of it as a wine to slow down with rather than rush through.
The Balaton uplands offer fresher whites with the lake’s influence and a relaxed holiday feel. Olaszrizling is common here, despite the name having little to do with Italy. A good example may show almond, citrus and gentle herbal character. It is an easy companion to fish, salads and terrace afternoons.
For something fragrant, try Irsai Olivér. This is a light, youthful white with grapey, elderflower-like aromas. It is best drunk young and cold, and it suits a casual first glass rather than a long, contemplative dinner. Wine snobs may dismiss it as simple, but simple can be exactly right after a warm afternoon of sightseeing.
When the weather is cooler, or dinner calls for something heartier, turn to Kékfrankos. Known elsewhere as Blaufränkisch, it is one of Hungary’s most important red grapes. Expect sour cherry, plum, pepper and lively acidity, with a freshness that makes it more versatile at the table than very heavy reds. It works particularly well with duck, sausages, mushroom dishes and paprika-rich stews.
Kadarka is lighter in colour and body, with red berries, spice and an appealingly delicate character. It can be a wonderful choice for drinkers who usually choose Pinot Noir, although styles vary considerably from producer to producer. The best examples feel lively and elegant; less careful ones can seem thin. This is a grape where a good recommendation from the person pouring matters.
For deeper, fuller reds, look towards Villány and Szekszárd in southern Hungary. Villány is often associated with generous, ripe red wines, including Bordeaux varieties as well as local grapes. Szekszárd produces characterful Kékfrankos and Kadarka, and is strongly linked with Bikavér, or Bull’s Blood.
Bikavér is not one single grape but a red blend, and its quality ranges from straightforward everyday drinking to complex, cellar-worthy wine. It is available from more than one region, most notably Eger and Szekszárd. Ignore dramatic legends and judge what is in the glass: a good Bikavér should have spice, fruit, freshness and enough structure to stand up to a proper meal.
Budapest has everything from polished wine bars with broad regional lists to relaxed neighbourhood places where you can order by the glass. For a first visit, a place offering several Hungarian wines in small pours is ideal. You are not committing to a full bottle before you know whether volcanic Juhfark is your sort of thing.
The wine neighbourhoods around the central districts are convenient, but convenience is not the only consideration. A smart-looking room may focus on international labels, while a modest cellar might offer more adventurous Hungarian selections. Look at the list before sitting down. If it names regions and grape varieties clearly, and offers staff who can explain them without fuss, you are usually in good hands.
Ask three useful questions: is this wine dry, how full-bodied is it, and what would you pair it with? There is no need to pretend you already know. Most good hosts are pleased when visitors want to understand the local wine scene rather than simply order the safest familiar option.
A guided tasting is especially useful if your time is short. It puts the wines into context – why one region tastes volcanic, why another is warmer and riper, and which snacks make each glass sing. Wine makes more sense when there is food on the table. Dry Furmint and Hárslevelű are excellent with freshwater fish, goat’s cheese, chicken dishes and lighter plates. A salty, creamy cheese can make a high-acid white feel even more refreshing.
Kékfrankos has the acidity for tomato-based dishes and enough spice for roast duck or pork. Kadarka is lovely with charcuterie, grilled vegetables and dishes where you want the wine to lift the meal rather than dominate it. For rich beef or game, a fuller Villány red or a structured Bikavér is often the better fit.
Sweet Tokaji Aszú deserves more than dessert status. Try it with blue cheese, foie gras or a nutty pudding, but order a small measure. Its intensity is part of the experience, and one thoughtful glass is usually more satisfying than several large ones.
Hungarian wine names are often pronounced differently from how English speakers expect, so do not worry about getting them perfect. Pointing to the list and asking your server to say the name is entirely normal. “Foor-mint” will get you close enough to Furmint; “kek-fron-kosh” is a useful approximation for Kékfrankos.
Prices can vary widely. There are very good, honest wines at accessible prices, while small-production bottles from respected estates may cost considerably more. The sensible approach is to set a rough budget, then ask for a recommendation within it. The highest-priced bottle is not automatically the most enjoyable one for your palate.
Finally, resist the urge to chase every famous label in one night. Two or three well-chosen glasses, with water and food between them, will tell you far more about Hungarian wine than an exhausting checklist. Choose a region that catches your imagination, ask one good question, and give the glass a little time – Budapest’s best wine moments are rarely rushed.
